Thai Chicken Noodle Soup

Ingredients

  • 1 lemon
  • 1 Tbsp. vegetable oil
  • 3/4 lb. boneless, skinless chicken breasts
  • 1 Tbsp. garlic
  • 1 tsp. fresh ginger
  • 6 cups water
  • 3 Tbsp. soy sauce
  • 1/4 tsp. hot pepper sauce
  • 1 package Knorr® Pasta Sides™ - Chicken flavor
  • 1 medium carrotsliced
  • green onions

Directions

  1. Peel lemon into four lengthwise strips with vegetable peeler then reserve 2 teaspoons juice; set aside.
  2. Heat oil in 3-quart nonstick saucepan over medium-high heat and cook chicken, garlic and ginger, stirring constantly, until chicken is no longer pink, about 3 minutes; remove and set aside.
  3. Stir water, reserved lemon peel, soy sauce and hot pepper sauce into same saucepan. Bring to a boil over high heat. Reduce heat to low and simmer 5 minutes; remove lemon peel. Stir in Knorr® Pasta Sides™ - Chicken flavor and carrot and cook over medium-high heat, stirring occasionally, until noodles are tender, about 10 minutes. Just before serving, stir in chicken, green onions and reserved lemon juice; heat through. Serve, if desired, with additional hot pepper sauce.
