Don’t Pound Your Patties

Hamburger-patty making, with its squeezing, mashing and pressing, is not the time to take out your aggression. Handle the meat gently, mixing with just enough pressure to form patties. Do not over-mix or over-handle; excessive mixing can result in hamburgers that are dense, firm and tough. Another tip is to run cold water over your hands when forming patties to keep the meat from sticking to your hands and fingers.
