Cleaning and Storing Mesclun

Here are some tips for getting the most from this favorite salad green: Immerse leaves in cold water to clean and discard tough stems and bruised, discolored or wilted leaves. Dry with a towel or salad spinner and lay clean leaves on a damp cloth towel or between damp paper towels. Place in a plastic bag in the refrigerator crisper. Use within a day or two.
