Cleaning and Storing Iceberg Lettuce

Here are some tips for getting the most from this favorite salad green: First, to remove the core, hit the stem end of the lettuce firmly on a hard surface, sticking a thumb near the core, then twisting to remove it. Remove any bruised outer leaves. Rinse the lettuce and let drain thoroughly. Store leaves in a plastic bag or airtight container in the refrigerator crisper. Use within a week.
