Italian Potato Salad

- 1-1/2 lbs. potatoes, peeled, if desired, cut into 1/2-inch cubes
- 3 Tbsp. Wish-Bone® Light Italian Dressing
- 1 Tbsp. Hellmann's® or Best Foods® Light Mayonnaise
- 1 Tbsp. chopped fresh parsley
- 1 small red bell pepper, chopped (about 1/2 cup)
In 3-quart saucepot, cover potatoes with water. Bring to a boil over high heat. Reduce heat to low and simmer uncovered 8 minutes or until potatoes are tender. Drain potatoes and rinse with cold water to cool.
In large bowl, combine Dressing, Mayonnaise and parsley; stir in red pepper. Add potatoes; toss gently. Serve chilled or at room temperature.
