Caprese Bruschetta

Serves: 4 • Prep time: 10 min • Cook time: 7 min

  • 16 slices French baguette, about 1/2-inch thick (16 oz. loaf)
  • 1-1/2 cups chopped tomatoes
  • 1/2 cup diced fresh mozzarella cheese
  • 1 Tbsp. chopped fresh basil leaves
  • 2 Tbsp. Wish-Bone® Red Wine Vinaigrette Dressing
  1. Preheat oven to 350°.
  2. Arrange bread slices on baking sheet. Bake 7 minutes or until crisp.
  3. Combine tomatoes, cheese and Wish-Bone® Red Wine Vinaigrette Dressing in medium bowl. Evenly spoon onto bread slices. Top with basil.

    It was tasty, but a little too messy! It would have been better in a salsa type of deal, with some melted cheddar cheese on top!
