Hearty Two-Bean Vegetable Chili
Serves: 8 • Prep time: 10 min • Cook time: 25 min
- 1/4 cup PromiseĀ® Buttery Spread
- 1 large sweet onion, chopped
- 2 large zucchini, chopped
- 2 large yellow, orange and/or red bell peppers, chopped
- 1 can (16 oz.) cannellini or white kidney beans, rinsed and drained
- 1 can (15 oz.) black beans, rinsed and drained
- 1 can (15 oz.) no salt added tomato sauce
- 1 Tbsp. chili powder
- 1 tsp. dried oregano leaves, crushed
- 1/4 tsp. salt
Melt PromiseĀ® Buttery Spread in 4-quart saucepot over medium-high heat and cook onion, zucchini and bell peppers, stirring occasionally, 8 minutes or until vegetables are tender and just starting to brown. Stir in remaining ingredients. Bring to a boil over high heat. Reduce heat to low and simmer 8 minutes or until heated through. Serve, if desired, with fat free sour cream.
