Braised Chicken with White Beans & Baby Spinach

  • 1 lb. bone-in skinless chicken thighs 
  • 1/2 tsp. dried thyme leaves, crushed
  • 1/8 tsp. ground black pepper
  • 1-1/2 Tbsp. Promise® Buttery Spread
  • 1 medium onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1-1/2 cups low fat, reduced sodium chicken broth
  • 1/4 cup dry white wine or water
  • 1 can (15 oz.) cannellini or white kidney beans, rinsed and drained
  • 1 bag (10 oz.) baby spinach leaves, washed 

Season chicken with thyme and pepper. Melt 1 tablespoon Promise® Buttery Spread in 12-inch nonstick skillet over medium-high heat and brown chicken, turning once, 6 minutes. Remove chicken from skillet; set aside.

Add remaining 1/2 tablespoon Spread in same skillet and cook onion, stirring occasionally, 6 minutes or until tender. Add garlic and cook 30 seconds. Add broth and wine and bring to a boil over high heat. Reduce heat to low and return chicken to skillet. Simmer covered 5 minutes. Stir in beans and spinach. Simmer uncovered, stirring occasionally, 5 minutes or until chicken is thoroughly cooked.
