Sweet Potato Pie

Serves: 8 • Prep time: 5 min • Cook time: 1 hour

  • 2 cups mashed cooked or canned sweet potatoes or yams (about 1-1/2 lbs.)
  • 2 eggs
  • 3/4 cup firmly packed brown sugar
  • 3/4 cup milk
  • 1/4 cup I Can't Believe It's Not Butter!® Spread, melted
  • 1 Tbsp. all-purpose flour
  • 2 tsp. vanilla extract
  • 2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 9-inch unbaked pie shell

Preheat oven to 425°.

Combine all ingredients except pie shell in large bowl with wire whisk. Pour into pie shell.

Bake 15 minutes. Reduce heat to 375° and continue baking 45 minutes or until knife inserted 1-inch from edge comes out clean. Cool completely on wire rack. Garnish, if desired, with whipped cream.

TIP: Substitute 1/2 cup egg substitute for the eggs.

    You should try the lemon extract instead of vanilla,its very good.
