Grilled Summer Corn & Tomato Salad

  • 3 Tbsp. I Can't Believe It's Not Butter!® Spread, melted
  • 1 clove garlic, chopped
  • 4 ears corn-on-the-cob, husked
  • 2 cups cherry tomatoes, quartered
  • 1/2 cup chopped red onion
  • 1/4 cup loosely packed fresh basil leaves, thinly sliced
  • 1 Tbsp. red wine vinegar
  1. Combine I Can't Believe It's Not Butter!® Spread with garlic in small bowl. Brush corn with Spread mixture and grill, turning occasionally, 15 minutes or until corn is golden on all sides; cut kernels from corn.
  2. Combine corn with remaining ingredients in medium bowl. Season, if desired, with salt and ground black pepper.
