Disappearing Buffalo Chicken Dip

Makes: 3 cups • Prep time: 15 min • Cook time: 20 min

  • 2 cups diced or shredded cooked chicken
  • 1/4 cup cayenne pepper sauce*
  • 1 cup Hellmann's® or Best Foods® Real or Light Mayonnaise
  • 1 cup shredded cheddar cheese (about 4 oz.)
  • 2 Tbsp. finely chopped green onions (optional)
  • 1 tsp. lemon juice
  • 1/4 cup crumbled blue cheese
  1. Preheat oven to 375°.
  2. Toss chicken with cayenne pepper sauce. Stir in remaining ingredients except blue cheese. Turn into 1-1/2-quart shallow casserole, then sprinkle with blue cheese.
  3. Bake uncovered 20 minutes or until bubbling. Serve, if desired, with celery and/or your favorite dippers.

    we purposely called this "disappearing" Buffalo chicken dip because everytime we make it...there's none left! ~AMC

    This was great -- it's better if it's really hot so I left it in the oven for 30 minutes. And, I agree, it's better with the celery and carrots than with the chips!

    I'm a bleu cheese lover but some of my family members are not. Any suggestions on a different kind of cheese? Thanks

    I am not a fan of bleu cheese either. I'm planning to use feta. I think it would work.

    I made this dip with canned chicken & doubled the receipe. It was very good and I was asked for the receipe many times.

    I've seen mozzarella cheese substituted for bleu cheese in another buffalo chicken recipe.

    Absolutely hands down the best chicken wing dip I've ever had. This will be my new "take to a party" dish to pass. Quick, easy and delicious.

    luvcooking, I'd try mozzarella cheese instead of blue. Although I think it might totally change the taste of the dish.

    if the blue cheese taste is too strong, you could try using 1/2 cup mayo & 1/2 cup blue cheese dressing (instead of 1 cup mayo) and then top with more cheddar or shredded parmesan cheese.
