Avocado Breakfast Sandwiches

Serves: 4 • Prep time: 15 min • Cook time: 3 min

  • 1/4 cup Hellmann's® or Best Foods® Light Mayonnaise
  • 1/4 cup nonfat plain yogurt
  • 1 tsp. Dijon mustard
  • 1 tsp. lime juice
  • 1 Knorr® Chipotle MiniCube, crumbled
  • 4 large eggs, cooked as desired
  • 1 avocado, thinly sliced
  • 4 slices whole grain bread, toasted

Heat first 5 ingredients in a small saucepan on low heat; set aside.

Layer eggs and avocado on toast, then drizzle with sauce.

    A bit too different for my taste but I always make this for my husband, he loves avocado.

    At first i thought it doesn't look that appetizing, but after reading some of your reviews, I think i may give it a shot!

    this is such a healthy refreshing dish and something I never would have thought of on my own it can be a little hard to plate if you make the eggs to runny I suggest poached.

    I wasn't too sure about this recipe - but we tried it anyway and it does taste great!

    I wasn't too thrilled by the look of this recipe - but i tried it finally and it's really very good!
