Big Game Stuffed Mushrooms

Makes: 12 appetizers or 6 servings • Prep time: 30 min • Cook time: 35 min

  • 12 large white mushrooms (about 1-1/2 lbs.)
  • 2 Tbsp. Promise® Buttery Spread
  • 1-1/2 cups finely chopped zucchini
  • 1 cup finely chopped red or orange bell pepper
  • 1/2 cup finely chopped onion
  • 8 ounces lean ground turkey*
  • 3/4 tsp. ground cumin
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper
  • 2 Tbsp. shredded fat free cheddar cheese

Preheat oven to 375°. Remove and finely chop mushroom stems; reserve 1 cup.

In 12-inch nonstick skillet, melt Promise® Buttery Spread over medium heat and cook zucchini, red pepper, onion and reserved mushroom stems, stirring occasionally, 5 minutes or until tender. Add ground turkey and cumin and cook, stirring occasionally, until browned, about 5 minutes. Stir in salt and black pepper; set aside.

On baking sheet, arrange mushroom caps; evenly stuff with turkey mixture. Bake 25 minutes or until mushrooms are tender. Sprinkle with cheese.

*For Vegetarian Stuffed Mushrooms, substitute 2 additional small zucchini, finely chopped, instead of turkey.

    I tried making these again but instead of turkey I used shrimp. It was unbelievably tasty!
