Holiday Butternut Squash with Apple & Cranberries

Serves: 4 • Prep time: 15 min • Cook time: 45 min

  • 1/4 cup Shedd's Spread Country Crock® Spread, melted
  • 1 medium butternut squash (about 1-3/4 lbs.), cut into 1/2-inch cubes (about 5 cups)
  • 1 medium apple, cubed
  • 1/2 cup dried cranberries
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg (optional)
  • 2 Tbsp. firmly packed brown sugar

Preheat oven to 425°.

Combine all ingredients in 1-1/2-quart baking dish. Season, if desired, with salt. Cover and bake 30 minutes. Remove cover and bake an additional 15 minutes or until squash is tender.

    Ive never been that found of squash but this is amazing!

    It is a great side dish you can use all year round. For people who have diabetes like I do you can use spelenda brown sugar instead of the regular one. It works just as great, and lower in sugar and calories.

    keep the chunk size to 1/2" cubes not smaller

    My version of this includes a touch of raspberry vinegar, which gives the flavors a little pop.
