What's For Dinner? (A Parent's Dilemma)

Okay fellow soccer moms, with back-to-school activities in full swing, the last thing we have time for is getting a nutritious and delicious dinner on the table. Here are some of my tips for making mealtime less stressful.

Double up on Sundays. Try to make a big, traditional dinner on Sundays — roast chicken, pot roast or a big pot of spaghetti and meatballs. Then get creative with the leftovers for quick weeknight meals. Kids will love leftover pasta when you turn it into String Cheese Spaghetti.

Get out the slow cooker. I use mine all year long, but this is the time of year when I really rely on it. One of my family’s favorite slow-cooker recipes is Asian Glazed Short Ribs. Get the ingredients together the night before. Most recipes can be completely assembled in the slow-cooker insert and kept in the refrigerator overnight. In the morning, simply pop your dish into the slow cooker and set the timer. You’ll come home to a home-cooked meal!

Stock your freezer. There are a lot of great convenient meals out there, so keep them on hand during this busy time of year. Everyone in my home has a favorite Bertolli® “Frozen Dinner for Two” variety, and these dishes are simple enough that my kids are able to prepare them — and clean up — themselves!
