When it comes to food, my philosophy is to keep it simple. And no time of year is easier to do that than summer.
Whether for a quick weeknight meal or a summer barbecue for family and friends, fresh summer flavors need very little enhancement. Choosing the right food is the first step, and this time of year there is much to choose from. Start with red, ripe tomatoes; cucumbers; fresh from the garden or big, juicy strawberries and you won’t go wrong.
When entertaining, I like to make a variety of salads ahead of time, mixing some classic recipes, like Original Potato Salad or Mediterranean Tomatoes & Mozzarella, with recipes that have an interesting twist or ethnic flavors, such as Creamy Citrus Berry Jicama Salad. This frees me up to spend more time relaxing and less time tending to the grill.
