Shop Locally, Cook Globally
Lauren of The Unilever Consumer Kitchens explains how to pair local produce with international flavors.

Now that we’re being challenged to save the environment in every way we can, it seems that even a trip to the local market can make a big difference. So, forget about terms like “carbon footprint,” “sustainability,” “organic” and “green” for now, and simply explore your local markets for wonderful, fresh produce. (Fortunately at this time of year, you’ll find it’s a lot easier to shop with the environment in mind.)
By purchasing local foods in season, you support the farmers in your area while helping to eliminate the environmental damage caused by shipping food thousands of miles. In addition, your family gets the benefit of eating fresh, unprocessed fruits and vegetables.
What’s more, you can take these fresh, fabulous and familiar ingredients to another place by introducing global flavors. For a sweet and spicy summer soup try Cantaloupe Soup with Chipotle Cream. One of my favorite salads, Creamy Citrus Berry and Jicama Salad, combines wonderful contrasting flavors and textures. I also recommend Corn & Black Bean Salad, Greek Pizza and Broccoli Curry Salad for simple twists using farm-fresh ingredients.
Buying locally and in season has many benefits, but what’s best of all: The food simply tastes better.
