Kitchen Basics: Thanksgiving Leftovers 101

Try these tips for transforming tonight’s dinner into tomorrow’s lunch.

Clean plates make happy chefs. But sometimes even the most enjoyable meals can yield leftovers. Freezing and reheating food can be economical — not to mention delicious! Here are some general rules of thumb when it comes to saving your leftovers.

Safety First!

  • Before refrigerating or freezing your food, wait for two hours in temperate weather.
  • When storing food, use short, shallow containers. This will allow for faster cooling.
  • Don’t keep refrigerated leftovers for more than three days. Labeling containers with dates will help you keep track

Turkey Time

  • Frozen turkey can be kept for up to twelve months. Store turkey and stuffing separately.
  • When reheating turkey, the oven should be set at a minimum of 325° and the turkey should be at least 165°. Do not reheat turkey more than once.
  • Gravy (try Knorr® Roasted Turkey Gravy) or barbecue sauce can add moisture to reheated turkey.
