Kitchen Basics: How to Slice a Pineapple

Whether you’re looking for a more wholesome dessert or craving something sweet, pineapple is the perfect ingredient. (Grilled Pineapple à la Mode and Pork Chops with Grilled Pineapple are two great examples.) Figuring out how to slice this delicious tropical fruit it can be tricky, though. Follow these simple tips to get the job done right.
- The ripe stuff. The key to selecting a fresh pineapple is making sure the body has a bright hue and that the leaves are a deep green. Next, give it a squeeze. If the pineapple is supple, feel free to place it in your shopping cart. (Note: Be wary of any discolored, bruised or moldy fruit.)
- The tools. Consider purchasing a pineapple corer. (VacuVin makes a great one.) This handy gadget really speeds up the slicing process. For those of you who don’t own a corer, you’ll need a sharp knife and a cutting board.
- Going through the motions. Here, a step–by–step guide to help you with the process.
1. Lie the pineapple on its side and cut off both ends. (If you separate the stem leaves, you can use them as a decoration for future dishes.)
2. Remove the spiky skin by standing the pineapple upright and slicing down. Continue all the way around the pineapple, until it’s completely peeled. (Remove hardened corners with a peeler.)
3. Slice the pineapple into four vertical sections.
4. Lay each section on its side and carefully cut off the core, then slice the rest into chunks.
