Comfort Food to the Rescue

Now that the hustle and bustle of the holidays are over — and a resolution or two have already been broken — it’s time to get back to the normal routine. No more excuses for indulgent party food and takeout; it’s time for home cooking again.
There’s nothing like an old favorite on a cold January night. I know the phrase comfort food can imply time-consuming preparation, but with some shortcuts you can have the warm and hearty meal you’re craving in no time.
One of my family’s favorite comfort foods is Baked Potato Soup. You’ll have a satisfyingly delicious soup in less than 30 minutes, plus you can save time by cooking the potatoes in the microwave.
