INGREDIENTS
- 2 Tbsp. Promise® Buttery Spread
- 1 small orange or red bell pepper, finely chopped (about cup)
- 1 small zucchini or yellow squash, finely chopped (about cup)
- 4 large cremini or white mushrooms, thinly sliced (about 1 cup)
- 1/2 cup finley chopped onion
- 1 clove garlic, finely chopped
- 1/3 cup orzo pasta, cooked according to package directions
- 2 Tbsp. Parmigiano-Reggiano cheese
- 1 Tbsp. thinly sliced basil(optional)
DIRECTIONS
Melt Promise® Buttery Spread in 12-inch skillet and cook orange pepper, zucchini, mushrooms and onion, stirring occasionally, 5 minutes or until vegetables are tender. Stir in garlic and cook 30 seconds. Stir in orzo and cook, stirring frequently, 2 minutes or until starting to turn golden. Sprinkle with cheese and basil and season, if desired, with ground black pepper.
