Hearty Beef Barley Stew

SERVES: 8   PREP TIME: 10 minutes   COOK TIME: 1 hour 45 minutes


INGREDIENTS

  • 1 Tbsp. olive oil
  • 1-1/2 lbs. beef stew meat, cut into 1-inch cubes
  • 2 cups baby carrots
  • 1 package (10 oz.) fresh mushrooms, sliced
  • 1 envelope Lipton® Recipe Secrets® Onion Soup Mix
  • 2 cans (14-1/oz. each) beef broth
  • 1 can (14-1/2 oz.) diced tomatoes
  • 2 cups water
  • 3/4 cup uncooked pearled barley
  • 1 cup frozen green peas

DIRECTIONS

Heat olive oil in 6-quart saucepot over medium-high heat and brown beef.

Stir in remaining ingredients except peas.

Bring to a boil over high heat. Reduce heat to medium-low and simmer covered stirring occasionally, 1-1/2 hours or until beef is tender. Stir in peas. Cook 5 minutes or until heated through. Season, if desired, with salt and ground black pepper.
